Wow....is all I can say about this dish!!
This is another recipe from Prevention's Quick and Healthy Low-Fat Cooking and it is phenomenal! What rocks even more is that you don't need to fire up your oven just to make it ;)
I did a few things differently...starting with omitting the olives...not on purpose though. I also decided to use a whole avacado vs. just half of one. When it came to the mayonnaise, I used a light version instead of fat free. We still had half a jar of light mayonnaise in the fridge and I just didn't see the point of tossing it out and spending money on fat free. Although I am sure if I did use the fat free one, it still would have came out wonderfully :)
Trust me when I say that your family, friends, and whoever you serve this to will be coming back for more. Yes....it's that good!
Seven-Layer Skinny Dip
(serves 6-8)

Ingredients:
1 can black beans, rinsed, drained, and mashed/processed
1 cup nonfat sour cream
1/2 cup fat free mayonnaise OR light mayonnaise
1 tsp. chili powder
1 tsp. ground cumin
1 cup shredded Fat Free Cheddar Cheese
1/2 cup chopped green onions/scallions
1/2 cup sliced black olives
1 tomato, seeded and chopped
1/2 avacado, chopped OR a whole avacado, chopped
Directions:
1. Spread the mashed beans over the bottom of a 9" pie plate.
2. In a small bowl, combine the sour cream, mayonnaise, chili powder, and cumin.
3. Spread this mixture over the beans. Then sprinkle on the green onions, olives, tomatoes, and avacado. 4. Lastly, sprinkle the cheese on top. Chill until ready to serve/eat.

I have a recipe for a similiar one that doesn't use avocados but you can lighten it by using fat free or light sour cream too.

This dip sounds delicious, in fact too delicious! I would probably eat half the bowl in one sitting and then the idea of "skinny dip" would be out the window :D Portion control is a real issue for me! I'm wishing you and your family a wonderful new year!!
