Menu Plan Monday


This is the last week we have until Husband Man arrives home.  Due to this, our menu for this week will once again be simple.  The kids and I actually did have a chance to eat some of the meals off of last week's menu so I have added some new meals to this week's.  I am only going to make breakfast twice a week because I am discovering that my children aren't huge breakfast eaters.  They do not have preschool two days a week, so those will be the days where I will cook breakfast :)  They do, however, eat lunch.

Brownie Mallow Bars & A Cookbook Giveaway


I'm feeling the urge for another cookbook giveaway!!!  What do y'all think?  I'll get to that soon....in the mean time.....

Military Wives.....get togethers.....love em!  The two go hand in hand.  I went to one this week and had a blast.  I decided to make these wonderful brownies (along with a few other dishes) to tote along with me.  It was my first time making these scrumptious squares of ooey gooey goodness and the recipe definitely did not disappoint!  There were some requests for the recipe so I am posting it on here :) 

If you look closely, there is a layer peanut butter, rice crisipies, and chocolate chips...followed by a layer of marshmallows....all on top of a fudgey brownie square. In the words of Rachel Ray....yummmmmm-o!!!  Ladies (and gentlemen), check your diets at the door when you make this recipe because it is that good!  They are best at room temperature, however, refrigerating them won't harm anything either ;) 

Brownie Mallow Bars

1 (18 oz.) package fudge brownie mix
1 (10.5 ounce) package miniature marshmallows or half a bag of big marshmallows (cut in half)
2 cups semisweet chocolate chips
1 cup peanut butter
1 tablespoon butter
1 1/2 cups crisp rice cereal

Prepare brownie batter according to package directions for fudge-like brownies. Pour into greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 28-30 minutes. Top with marshmallows; bake 3 minutes longer (marshmallows will not be completely melted). Cool on a wire rack.  Please, please, please make sure the brownies and marshmallows have cooled before proceeding with the next step in this recipe ;)

In a saucepan, combine the chocolate chips, peanut butter and butter. Cook and stir over low heat until smooth. Remove from the heat; stir in cereal. Spread over brownies. Refrigerate for 1-2 hours or until firm before cutting.

Menu Plan Monday


The kids and I had a busy week last week and as a result, hardly anything on our menu from last week was cooked or eaten.  So some of these meals are repeats.  Husband Man is still away at school, so we are continuing to keep the meals simple until his return (in 11 days) :)

Homemade Apple Crisp


Did y'all know that September through November is National Apple Month?  When I heard about this, I thought this recipe would be quite fitting to post ;)  This lovely dessert reminds me of an apple pie, minus the crust.  When you are baking it in the oven, the aroma of the cinnamon and apples seriously will remind everyone in your house that fall has arrived!  What a great way to use up all those left over apples also. Some people prefer to put oatmeal in their apple crisps, but I'm not a big fan of oatmeal in my crisp, so this recipe was perfect.  Another advantage, it's super easy and only uses a total of 5 ingredients (not counting water)!  Yes, 5 ingredients!!  Who would have thought?!  This has definitely become a favorite at our house and we hope it becomes a favorite in yours as well.  Feel free to add more then just cinnamon into the filling.  A little dash of nutmeg and a few sprinkles of Apple Pie Spice would probably taste even yummier.  Serve with a few scoops of vanilla icecream ;)

Homemade Apple Crisp

4 cups sliced Granny Smith apples
1 teaspoon ground cinnamon
A little over 1/4 cup of water
1 cup white sugar or 1/2 cup white sugar and 1/2 cup brown sugar
1/2 cup butter
3/4 cup all-purpose flour

Preheat oven to 350 degrees.  Grease an 8x8 inch baking dish.

Place apples in prepared dish. Sprinkle with cinnamon. Pour water over all. In a bowl, cream together sugar and butter. Blend in flour. Sprinkle mixture evenly over apples.

Bake in preheated oven 30 to 40 minutes, until apples are tender and crust is golden.

Menu Plan Monday



This is my first contribution to Menu Plan Monday.  I have been planning my family's meals for years and when I heard about this meme, I thought it was such a wonderful idea!  When you get a chance, go to Laura's site and check it out :) If you LOVE organization, you will enjoy her corner on the internet :)

Our meals for the past two months have been quick and easy, mostly due to the fact that Husband Man has been away at school for two months...leaving the kids and I to eat meals on our own.  When he is away on long stints like this, I don't spend much time in the kitchen, mainly because I don't see the purpose of making four-course meals when it is just the kids and I.  So I plan simpler meals.  He is due to arrive back here in 19 days so I am sure our menus will start having more elaborate meals ;)

Until then...here is our menu for this week.......

Mom's Zucchini Bread & Fall Decorating


Fall is in the air over here in our neck of the woods.  The leaves are starting to change colors and fall to the ground, the air is getting cooler in the evenings, and places like Starbucks and Michael's are filing their aisles and everyone's tummy's with pumpkin latte's and fall decor.  Yes, it is that time of year again!  And I am bursting with delight because fall is one of my favorite seasons, besides winter. 

In our household, this weekend is going to be all about putting up our fall decor! 
Check out some pictures from last year's autumn wonderland (note...the picture quality isn't the best due to the fact that all I had was a cozy little point and shoot camera back then...but you'll get the idea)....

What is even more festive then putting up decor? 

Fall baking and cooking!!  Which brings me to today's recipe, Mom's Zucchini Bread :)

A recent trip to our local Farmer's Market had me up to my eyeballs in zucchini...and I had to do something with all of those gorgeous green vegetables.  So I figured, why not try my hand at making some bread?

In the last few years, I have heard lots of people explain how wonderful zucchini bread is. However, I am a banana bread girl all the way....but one bite of this bread and I was in heaven!  It freezes very well too...which I found to be wonderful.

Note to all the health nuts out there...this recipe is....by no means...on the healthy side!  Just a word of warning ;)



Mom's Zucchini Bread
(adapted from Allrecipes.com)

Ingredients:

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts

Directions:
 

Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.

Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Cookbook Organization & Storage


Happy Labor Day everyone!  Today, I figured I'd take a break from writing a recipe post and write a post about cookbook organization and storage.

I'm about to let all of you in on a little secret.  Are you ready for it?  Are you sure? 

.................I'm a HUGE cookbook collector! 

And since this is a blog about food and cooking and recipes and such.....I figured we could talk more about this addiction....

How huge is huge?  Well....the below picture should speak for itself......


Yes....the above picture is of my wonderful collection.  Mind you, it has been 9 years in the making (ever since I was first married).  If it's one thing that runs on my side of the family, it's cooking. It also runs on Husband Man's side as well, because every time I see my mother-in-law, she is always giving me a cookbook or two.  These books have been bought by myself, been given to me as gifts or I have collected from my mother. 

If you are an avid collector of these precious books, the first piece of advice I have for you is to make sure you have the room to store them.  I firmly believe that cookbooks belong in or near the kitchen, mostly because this is where you will use them the most.  Our kitchen came with a spacious, built-in, 6 shelf pantry.  I use the bottom part of the pantry to store my cookbooks.  I have seen books being placed on top of counters, on the shelves in kitchen islands, and even in a kitchen cabinet. 

Let's break down the shelves....shall we....

Shelf #1



One half of this shelf is devoted to any books that are part of a series, so to speak (Cooking Light Annual Recipes, the Fix it and Forget It books, The Recipe Hall of Fame Books, etc...).  The second half is devoted to slow cooker/crock pot books, four and five ingredient recipe books, low fat cookbooks, and books that are not part of a series.

Shelf #2



The first half of this shelf is for all the regional cookbooks I have collected, with a few more stand alone books (not part of a series).  I also have any Military related cookbooks there as well.  The second half of the shelf belongs to any dessert and baking books.

The last shelf is for everything non-book related.  If I purchase a cooking magazine and find myself not being able to part with it, I store it here.  The little apple basket on the left stores all of those little mini magazine booklets that you purchase at the register while waiting in line.  I also use it to store the cookbook manuals that come with appliances like my blender, waffle maker, or ice cream maker.  This is the shelf that also holds any empty recipe binders (more on this later) and any lose recipes that I may have cut out of newspapers or magazines.  The cute "Live, Laugh, Love" butterfly box holds my collection of recipe cards.

And there you have it, my little secret...........


.....if someone gives me a new cookbook as a gift or if I purchase one that I simply have to have, I follow the "one in, one out" rule.  Simply meaning, for every new cookbook that I obtain, one of the books in my collection has to go either to a friend or to the library.  It helps cut down on clutter :)

Oh...but wait!!  It doesn't stop there!! 

The above pictures were just for all the books, magazines, and lose recipes that I have collected. 
For all of our family favorites....all the recipes that I have made and that everyone really enjoyed...I use these cute little recipe binders.....




They sit on the top of my kitchen hutch, where I can see them everyday.  I have broken the binders down into categories......Cookies, Desserts, and Beverages....Our Favorite Holiday Recipes (containing recipes that I ONLY make during fall/autumn, Thanksgiving, and Christmas)....Recipes from Family and Friends....and Recipes for every other category not listed.  I also have a white binder in the back that stores all of our favorite recipes that I have found on the Internet, but won't fit into the recipe binders.

Each binder has a few sheets of information on the favorite recipes that we have tried that have come from the books in my pantry....the name of the recipe, the name of the book, and the page number.

Whew!  It has taken me 9 LONG years to come up with an organization system that works for us!  I am always wanting to learn more about how others store their cookbooks and recipes, so I'm interested.....

Eating & Vacationing in South Eastern North Carolina


Hello my friends and fellow food bloggers!  It's been a few weeks since I have been on here.  The reason why? The Military has sent Husband Man to a high tech school all the way on the other side of the United States.  He's been gone since the beginning of August :(  Since he is gone, the kids and I recently took a three week vacation to Eastern North Carolina, where I grew up.  My parents rarely get to see my children since we live so far away from them, so this three week visit/stay was one that was valued and precious.

That's Pookie and I in the above picture, which was taken at one of my parent's favorite places to eat, Little Italy Pizzeria.  During our 3 week stay, we ate at all sorts of places, however, this restaurant really made a huge impression, so I wanted to share our experience with all of you :)

The menu speaks for itself............


That evening, we didn't have the pleasure of meeting the owners, so I did not have a chance to ask about the history of the restaurant.  However, according to my father, the owners came from Italy so the dishes that were being served that evening were made in pure Italian form. 

The restaurant was decorated very intricately and I could not help but notice the nicely placed water fountains around the windows and in the center. They were a nice touch in making us feel relaxed and at home....


Things were so relaxed, in fact, that The Dude slept in his stroller throughout the whole entire meal.....



Once everyone's orders were placed, we couldn't wait to feast on the upcoming meal.....




My parents and Pookie......



As a pre-dinner treat, they gave us a loaf of bread and butter.  I had heard they usually give Bruschetta instead of regular bread, but we were not complaining.  It was so soft and warm, it felt like it just came right out of the oven.....



I ordered a side salad to go with my meal.  My mother informed me that their ranch dressing is homemade.  And boy was she ever right.  That dressing surely was not from a bottle!  The tanginess and rich flavor was enough to make me beg for seconds...lol. 



I ordered their Beef Filled Tortellini in Alfredo Sauce and was so pleased with the outcome!  The sauce was very thick, rich, and creamy.  They placed little bits of ham, tomatoes, and mushroom inside and I could not get enough of it....



I was so impressed with my meal that I decided to take pictures of all the other meals that were ordered...

My father ordered their Spaghetti.  It was seasoned perfectly that he did not feel the need to add Parmesan Cheese or other spices to it.  I think the meatballs did the trick on that....lol.....



My mother ordered their Philly Steak and Cheese sub.  The steak was sliced paper thin and was so tender.  I seriously could have ate the whole sandwich...lol.


Lastly, we ordered a pizza for Pookie and The Dude to share.  I just had to try a piece of this pizza and believe me when I say, it was heavenly!  I'm not sure what kind of cheese they used but the combination of that and the spices, really made my taste buds water.  Yes...it was that good!


Pookie enjoyed it and ate three pieces.  She can put down an entire pizza if you let her....lol....



Of course, no dinner is complete without ordering dessert.  I had to order one of their homemade cannolis :)  They had the option of chocolate or vanilla, so I chose the vanilla.  I had to get a little take home box for it though because I was to full to eat it.....



I ate it after everyone went to bed that night, and it was worth every penny.  I have tasted other cannolis in my day, but this was better then any other I have tried.  The cherries on both sides were a fabulous idea :)

Alas, we all left the restaurant that evening with our wallets lighter and our stomach's fuller. So if you are ever in South Eastern North Carolina, stop by Little Italy Pizzeria and spend the evening dining on some great food :)

The kids and I are back home now....patiently waiting for Husband Man's return.  So lookout for more yummy recipes soon :)
