For the post few months, I have been posting about my partnership with Sister Schubert's Homemade Rolls. This will be the last post in our little 4 post series. Since it is the last one, I decided to share a little recipe that my family has grown to love over the past year. The recipe is already on this blog, however, I wanted to share a little twist I did with it.
Upon the advice of a great blogging buddy (thanks Larky), I decided to use the soft pretzel rolls as bread bowl of sorts. It was such a wonderful idea! They are just the right size to be considered as mini and they are the perfect thing to serve if you are looking for individual appetizers. Not to mention, with Christmas only 5 days away, these would be a great thing to serve before that huge holiday meal.

Mini-Spinach Artichoke Dip Bread Bowls
(recipe adapted from Kraft.com...but modified by me)
(makes 6 rolls)
Ingredients:
1 bag of Sister Schubert's Soft Pretzel Rolls
1 can (14 oz.) artichoke hearts, drained and chopped
1 pkg. (10 oz.) frozen spinach, thawed and drained
3/4 cup grated Parmesan Cheese
A little under 1 cup of light mayonnaise
3/4 cup Shredded Mozzarella Cheese
1/3 cup Shredded Provolone Cheese
1/2 tsp. garlic powder
Directions:
1. Preheat oven to 350 degrees.
2. Place all of the above ingredients (except the rolls) in a large mixing bowl.
3. Mix well.
4. Place the ingredients in a 9 inch pie plate and bake for 20 minutes. Let cool.
5. While cooling, preheat oven to 375 degrees.
6. Place rolls in the oven for 7-9 minutes.
7. Once rolls are finished heating up, cut the tops of them off in a circle.
8. Scoop out the inside of the roll.
9. Fill with 2 or 3 spoon-fulls of the dip.
10. Serve warm.
