Doughnut muffins. Yummoo! Before we get to them though, I wanted to take a little time to let everyone know that Cooking With Libby has been making a few guest posts this week.

Now for the muffins.........
Aren't these just the cutest things you have ever seen?? I mean, just look at them....
Every time I make these, it takes me back to a time in my life when everything was new. I had just had my first child, my daughter, and things were so confusing for me, yet I was very joyful and happy. I'm sure some of you who have children can relate to that feeling ;) I remember making these muffins while watching her play in her playpen. All I could think to myself was, "this is such an awesome feeling!" To be able to be at home with my daughter and watch her play while I baked up something sweet in the kitchen was such a blessing. As time went on, I used to tell her that she would love eating these one day. Turns out I was right ;) She is now almost 5 years old and loves it when I make these ;)
They are such a wonderful treat to make if you have that craving for doughnuts but don't feel like dragging yourself to the store to purchase a box. Make these for your kids as an afternoon snack, your parents, your neighbors, your friends, or your co-workers.
Top them with the powdered sugar/cinnamon topping that is included in this post or melt some chocolate and go crazy with the cookie sprinkles like my children did.
Either way, they will be good to the very, very, very last bite........guaranteed ;)

Doughnut Muffins
(makes 5-7 muffins, depending on the size of your muffin pan)
Ingredients:
1/3 cup shortening
1/2 cup sugar
1 medium or large egg
1 and 1/2 cups flour
1 and 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
3/4 cup milk
Ingredients for Topping:
1/2 cup powdered sugar
1 tsp. cinnamon
1/4 cup margarine
Directions:
1. Preheat oven to 350 degrees.
2. In a mixing bowl with a fork, mash together shortening and sugar. Add the egg and whisk it all up until smooth.
3. Measure the flour, baking powder, salt, and nutmeg into the bowl. Pour in the milk.
4. Mix the batter with a whisk until it's smooth.
5. Drop 1/4 cup of batter into lined muffin tins.
6. Bake at 350 degrees for 20-25 minutes or until the tops are light brown and a toothpick inserted comes out clean.
7. Let cool. Make the topping while cooling.
Directions for the topping:
1. Mix the cinnamon and sugar together in a bowl.
2. Melt 1/4 cup margarine in a separate bowl.
3. Once the muffins are cooled, dip the tops of them inside the butter and then dip them into the cinnamon/sugar mixture...being sure to coat the top.
4. Serve warm.
**Recipe Tip: You can use just about any topping they have for doughnuts..melted chocolate with sprinkles, maple frosting, a glazed frosting, cinnamon/sugar combo, etc. The possibilities really are endless.**
