Doughnut Muffins & Guest Posts


Doughnut muffins. Yummoo! Before we get to them though, I wanted to take a little time to let everyone know that Cooking With Libby has been making a few guest posts this week.

The first one is over at Tina Butler's Blog, Mommy's Kitchen, where I am sharing my famous Chocolate Chip Cheesecake Brownies. The second guest post appearance is over at Steph's Bite By Bite, where I am sharing our recipe for Homemade Waffles. Now for the muffins.........

Aren't these just the cutest things you have ever seen??  I mean, just look at them....


Every time I make these, it takes me back to a time in my life when everything was new. I had just had my first child, my daughter, and things were so confusing for me, yet I was very joyful and happy. I'm sure some of you who have children can relate to that feeling ;) I remember making these muffins while watching her play in her playpen.  All I could think to myself was, "this is such an awesome feeling!"  To be able to be at home with my daughter and watch her play while I baked up something sweet in the kitchen was such a blessing.  As time went on, I used to tell her that she would love eating these one day.  Turns out I was right ;)  She is now almost 5 years old and loves it when I make these ;)

They are such a wonderful treat to make if you have that craving for doughnuts but don't feel like dragging yourself to the store to purchase a box. Make these for your kids as an afternoon snack, your parents, your neighbors, your friends, or your co-workers.

Top them with the powdered sugar/cinnamon topping that is included in this post or melt some chocolate and go crazy with the cookie sprinkles like my children did.


Either way, they will be good to the very, very, very last bite........guaranteed ;)

Doughnut Muffins


(makes 5-7 muffins, depending on the size of your muffin pan)


Ingredients:
1/3 cup shortening
1/2 cup sugar
1 medium or large egg
1 and 1/2 cups flour
1 and 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
3/4 cup milk

Ingredients for Topping:
1/2 cup powdered sugar
1 tsp. cinnamon
1/4 cup margarine

Directions:

1. Preheat oven to 350 degrees.
2. In a mixing bowl with a fork, mash together shortening and sugar. Add the egg and whisk it all up until smooth.
3. Measure the flour, baking powder, salt, and nutmeg into the bowl. Pour in the milk.
4. Mix the batter with a whisk until it's smooth.
5. Drop 1/4 cup of batter into lined muffin tins.
6. Bake at 350 degrees for 20-25 minutes or until the tops are light brown and a toothpick inserted comes out clean.
7. Let cool. Make the topping while cooling.

Directions for the topping:

1. Mix the cinnamon and sugar together in a bowl.
2. Melt 1/4 cup margarine in a separate bowl.
3. Once the muffins are cooled, dip the tops of them inside the butter and then dip them into the cinnamon/sugar mixture...being sure to coat the top.
4. Serve warm.

**Recipe Tip:  You can use just about any topping they have for doughnuts..melted chocolate with sprinkles, maple frosting, a glazed frosting, cinnamon/sugar combo, etc.  The possibilities really are endless.**

Menu Plan Monday


Hello everyone!  Wow!  I can't believe a whole week has flown by already!  I hope everyone had a wonderful weekend.  Husband Man injured his shoulder last week while completing renovations to our bedroom, so we all had a low key weekend.  We had plans to go to the zoo, but those fell through due to his shoulder.  While he was resting this weekend, I took the time to give this blog a little facelift ;)  I'm happy with how it turned out.  I was starting to miss having a three column layout and this weekend I made it happen ;)  There are still a few more things to do but it's pretty much finished for the most part.

I have also decided to revert back to making our menus bi-weekly.  I thought that if I made the menus weekly that we would save money in the long run.  Boy was I wrong....lol.  Going to the grocery store once a week for things on the menu, on top of other things we needed really took a toll on our food budget.  I added up the bills after each trip and compared it to how much we spend bi-weekly when we do our big grocery shopping.  The conclusion?  We actually ended up spending a lot more.  Funny huh?

On the menu for these next few weeks are plenty of chicken and meat dishes, as we have lots to use up.  We also have an over abundance of frozen fruit to use up as well, so baking will be in the plans.  My children are out of school for spring break this week and I have a few special treats up my sleeve for them ;)

Yogurt Brunch Parfaits



Yogurt and fruit.  What a lovely combination if I do say so myself.  I have never been much of a yogurt fan, that was until I started hearing about the major health benefits it has on our immune systems.  Did you know that yogurt is very good at preventing bacteria infections?  Did you also know that it is also a great way to regulate your digestive track?  It has what is called, "probiotics,"  which are good antibodies that our systems need to help stave off all those nasty infections that us women may be prone to having. 

My children love yogurt.  If I let them, they would probably eat it for breakfast, lunch, and dinner.  They like the flavored kind, however I am trying to get them used to eating the plain kind.  This is not so easy to do, as their taste buds are very much used to the one's that contain artificial sweeteners and flavors.  Heck, it even took me quite some time to get used to eating plain yogurt. 

Enter this lovely little recipe.  I am so glad I came across it.  I kid you not, as soon as I was finished putting the parfait together, my 4 year old daughter came into the kitchen and was literally begging to eat it.  She kept a watchful eye on it as I prepped it for a photo shoot, making sure my 3 year old son didn't go anywhere near it. 

At first glance, it looks like a strawberry ice cream sundae, which is what I think she thought it was.  I expected her poor little heart to break when I told her it was just yogurt and fruit.  But instead, it did the opposite, which resulted in more begging.  In the end, she got what she wanted (the parfait) and mommy got what she wanted (finally getting her to eat plain yogurt).  Even my 3 year old son wanted in on the action ;)

So yes.  My opinion?  If you love yogurt and fruit, make these.  Make these now.  This instant.  Your kids AND your body will thank you for it ;)  If you aren't a yogurt fan, then disregard this post ;)

Yogurt Brunch Parfaits


Regular Ingredients:
1/3 cup apricot preserves
1 and 1/2 cups sliced strawberries
2 cups yogurt of any kind
1/2 cup granola

Low Fat Ingredients:
1/3 cup honey
1 and 1/2 cups sliced strawberries
2 cups plain yogurt
1/2 cup low-fat granola

Directions:
1.  Place the apricot preserves in a microwave safe bowl and microwave on high for 30 seconds or until it starts to bubble up. 
2.  Mix the warm preserves with the sliced strawberries and stir until well combined. 
3.  Layer a glass bowl or parfait cup, starting with half of the strawberries, then half the yogurt, then half the granola.  If using honey, place some of the honey on top of the strawberries before the yogurt. 
4. Keep layering until you run out of ingredients.
5. Top with an extra spoonful of granola and serve immediately. 

***Recipe Tip: You don't have to just stick with strawberries, you can use bananas, raspberries, blueberries, or any other combination of fruit you desire.***
