Witches' Fingers & Peanut Masks {Halloween Treats}


Halloween is in 3 days so I figured I'd whip up these spooky little treats to share with y'all.  These ideas were adapted from one of the many Halloween magazines that I collect every year. They are so simple and only take 15 minutes from start to finish...maybe even less then that.  They are the perfect treats to make if you need something in a flash and don't have time to whip up an extravagant array of snacks.

Witches' Fingers
(Adapted from Gooseberry Patch's Magazine, Best of Halloween 2011)
(Makes 20 fingers)

~I have seen these around the blogosphere being made with crescent roll dough.  This version calls for creme-filled wafer sticks.  From looking at the picture in the magazine, it looks like they used plain sticks, however, I could not find plain so I ended up using the chocolate flavored kind.  I think the little brown spots only help to enhance the spookiness of the fingers ;)~


Ingredients:
10 creme-filled chocolate wafer sticks
20 sliced almond pieces
3 or 4 tbsp. of white frosting

Directions:
1.  Cut each wafer stick in half...make sure the place where you cut is slanted.
2.  Affix a sliced almond on the slanted end with a couple of dabs of white frosting.
3.  Store in the fridge until ready to serve.


Peanut Masks
(Adapted from Gooseberry Patch's Magazine, Best of Halloween 2011)
(Makes as many as you need)

~These are a great treat to make for your next Halloween party because it makes ALOT!  Not to mention who can turn down Nutter Butters topped with frosting and Chocolate covered raisins?  God Bless Gooseberry Patch ;)  You can make the frosting homemade and add the green and orange colors with food dye, or you can purchase the already made frosting/icing.  I just plopped the icing on the ends, however, if you want to use a nice decorator tip for the frosting....be my guest.~


Ingredients:
32 count package of Nutter Butter Cookies (or smaller package if you want)
1/2 cup of green colored decorator icing
1/2 cup of orange colored decorator icing
64 chocolate covered raisins

Directions:
1.  Take each cookie and place a dollop of the colored icing on each end.
2.  Top each end with the Chocolate covered raisins.
3.  Store in fridge until ready to eat.

           HAVE A SPOOK-TAC-ULAR HALLOWEEN!!!

Mama's Buttermilk Pancakes {A Tribute to My Mother} & a Giveaway from Susan G. Komen/Eggland's Best Eggs

October is Breast Cancer Awareness Month.  There will be races ran to help support cancer research and people all over the world will be sporting those cute little pink bracelets.  This is one of the few months that I hold near and dear to my heart.  I will be remembering a time back in my life when the words 'Breast Cancer' hit my family and I to the core.

You see, my mother was diagnosed with Breast Cancer in 2003.  It was the hardest thing my family and I ever have had to go through. 

I remember the day she told us. She did a three way phone call between my sister and I....with my father on another phone in their house. That was my first clue that something was wrong....when she rounded everyone up on the phone lines for a family meeting.  She was also sobbing while she was talking, which was my second clue. When she told us, my whole world changed. 

Of course, you never think it could happen to you or someone you love. You always hear stories and experiences from other people about what they went through or about what their loved ones went through, but never in your wildest dreams could you think it could ever happen to your family.

There is a saying that when one family member has cancer, everyone else does too....because it effects everyone...not just the person who is sick.  I couldn't really tell y'all what her experience was like because I was not up there while she was going through it, due to Husband Man being in the Military.  Nor can I write about everyone else's experience with it because I was not there.  I can tell you this though....my father hardly ever cries...and during this time...I heard him cry over the phone a few times...and it tore me up inside.

If you are Military, then you know what it's like being stationed so far away from family. It is the hardest thing you ever have to do, especially when you are super close and tight knit like my family. Home for me was 17 hours away by car...4-6 hours away by plane.  I had no choice but to learn how to deal with the situation....being so far away from my ill mother and feeling powerless.

Listening to my mother's status updates over the phone weren't exactly fun for me. I did discuss coming back home to help her through it, but she insisted that my place was down here in Louisiana with Husband Man...supporting him as only a wife can support a husband. Since she was the one who was sick, I complied with her wishes because I did not want to stress her out. 

I dreaded hearing the phone ring during that time in my life because I did not know what was waiting for me on the other end of that line.  Tears would well up in my eyes when I would talk to her over the phone.  On some days, she was so weak that she could hardly talk to me. 

I was mad at God for having this happen.  I was mad at Husband Man for joining the Air Force and having us move 17 hours away.  I was mad at myself for not being up there with her while she was fighting for her life.  It was hard.  And was also a learning experience for me. 

Despite all the tears, the frustrations, the anger, and the sadness....this story does have a happy ending.  My mother beat her battle with cancer and has been cancer free for 8 years and counting.  And while she was in remission, Husband Man and I took a trip up to North Carolina that same summer she was diagnosed.

What does this story have to do with pancakes and Eggland's Best Eggs?? Well, I'm about to tell y'all......
These wonderful pancakes are my mother's recipe......


.....they have been in my family for years. She made them for us when we were growing up and I have passed on this tradition in my own household, making them for my family as well :)

My children will not eat any other pancake recipe and know very well when I deviate from this one. It calls for two eggs...and of course, I used Eggland's Best Eggs to make them. 
I wanted to share this wonderful recipe with y'all as a tribute to the greatest woman that I have ever known, my mother....
Mama's Buttermilk Pancakes
(makes 12 pancakes)

Ingredients:
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. sugar
2 eggs, slightly beaten
2 cups buttermilk
2 tbsp. melted butter
Directions:
1.  Heat a skillet on medium-low heat. Or just low heat if your skillet heats up faster.
2.  In a medium bowl, sift together flour, baking soda, salt, and sugar.
3.  Add the eggs, buttermilk, and melted butter.
4.  Stir together until well blended. It's ok if there are a little bit of lumps in it.
5.  Using a 1/3 measuring cup, pour into skillet....one by one.
6.  Let cook on both sides for 2-3 minutes...or when plenty of bubbles start forming and the sides are looking like they are set.
7.  Serve with your favorite toppings.

Chocolate & Coffee Cream Cheese Crescents

This recipe has been on our menu to try for at least a month now.  We've been so busy over here lately that finding the time to play around the kitchen has been hard.  I finally found myself with a few extra hours on my hands last week and ran to the kitchen to make these.
It is a "Libby" original.  I put together two recipes that I already had, changed the amount of ingredients around, and added a few 'extras.'  The outcome of my tinkering around produced an awesome dessert that even my children loved!  My little Eli was in the kitchen with me while I was making these and I decided to have him drizzle on the chocolate :)  Not a bad job for a 3 year old ;)

This only made 5 crescents, so when Husband Man finished his, he kept asking me if I made anymore. I guess they were a hit ;)  These will go really well with your morning coffee or serve them as a light dessert after dinner.  Kids will love them because of the little Hershey Kisses that are melted and wrapped inside.  We enjoyed them and we hope you will too ;)

Chocolate & Coffee Cream Cheese Crescents
(makes 5 crescents)


Ingredients:
1 tube of crescent rolls
1/4 cup powdered sugar
4 oz. cream cheese
1 to 1 and 1/2 tsp. of really strong black coffee (depending on how strong of a taste you want)
1/2 tsp. vanilla extract
1/8 tsp. ground cinnamon (optional)
5 Hershey Kisses

Directions:
1.  Mix the powdered sugar, cream cheese, coffee, vanilla extract, and cinnamon in a small bowl.
2.  Roll out the dough of one crescent roll until it is flat.
3.  Take a spoonful of the cream cheese mixture and spread it onto the wide end of the dough.
4.  Unwrap a Hershey Kiss and place it in the middle of the cream cheese mixture.
5.  Take the wide end of the dough and start rolling. 
6.  Pinch and seal the ends of the roll.  Shape into crescents.
7.  Bake as directed on the package of rolls.
8.  Cool and sprinkle with powdered sugar.  Drizzle with melted chocolate if desired.

**Recipe Notes: It is recommended that you eat these right away after they cool for a few minutes.  Do not refrigerate them because the Hershey Kissses inside will turn into hard chocolate.**

Seven-Layer Skinny Dip


Wow....is all I can say about this dish!!  

This is another recipe from Prevention's Quick and Healthy Low-Fat Cooking and it is phenomenal!  What rocks even more is that you don't need to fire up your oven just to make it ;)  

I did a few things differently...starting with omitting the olives...not on purpose though.  I also decided to use a whole avacado vs. just half of one.  When it came to the mayonnaise, I used a light version instead of fat free.  We still had half a jar of light mayonnaise in the fridge and I just didn't see the point of tossing it out and spending money on fat free.  Although I am sure if I did use the fat free one, it still would have came out wonderfully :)

 Trust me when I say that your family, friends, and whoever you serve this to will be coming back for more.  Yes....it's that good!

Seven-Layer Skinny Dip
(serves 6-8)

Ingredients:
1 can black beans, rinsed, drained, and mashed/processed
1 cup nonfat sour cream
1/2 cup fat free mayonnaise OR light mayonnaise
1 tsp. chili powder
1 tsp. ground cumin
1 cup shredded Fat Free Cheddar Cheese
1/2 cup chopped green onions/scallions
1/2 cup sliced black olives
1 tomato, seeded and chopped
1/2 avacado, chopped OR a whole avacado, chopped

Directions:
1.  Spread the mashed beans over the bottom of a 9" pie plate.  
2.  In a small bowl, combine the sour cream, mayonnaise, chili powder, and cumin.  
3.  Spread this mixture over the beans.  Then sprinkle on the green onions, olives, tomatoes, and avacado.  4.  Lastly, sprinkle the cheese on top.  Chill until ready to serve/eat.

Left Over Chicken/Turkey Casserole & Another Winner!

Now onto the recipe.....

I realize that it's a little early to start thinking about a Thanksgiving menu.  However, I wanted to share this recipe with all of you this week.  If you are wondering what to do with some of that left over turkey you have from that wonderful dinner....you need to try this recipe out. 

I found this recipe somewhere on the internet years ago.  We were so tired of having turkey sandwiches and wanted something different to make.  This dish definitely hit the spot and it has been in our family for the last 5 years.  It calls for nutmeg which is something that normally isn't called for in a casserole.  However, I think it adds a festive, zingy touch to it.  Is zingy even a word? ;) 

You can also substitute chicken in place of the turkey.  This is what we did this week and it came out just as yummy.  Make it tonight with some chicken and if you like it, save the recipe for upcoming Thanksgiving Holiday ;)  You'll be glad you did ;)

Left Over Chicken/Turkey Casserole
(Serves 6)


Ingredients:
2 cups uncooked pasta (of any shape)
1/4 cup butter
1 and 1/2 cups chopped celery
1/2 cup chopped green bell pepper
1/2 cup chopped onion
2 cans (10 and 3/4 oz.) condensed cream of chicken soup
2/3 cups milk
2 cups Shredded Cheddar Cheese
2 cups cooked and shredded turkey or chicken
1 jar (4 oz.) chopped pimentos, drained
1/2 tsp. salt
1/4 tsp. ground nutmeg

Directions:
1.  Preheat oven to 350 degrees.  Cook and drain noodles, following package directions.
2.  In a medium saucepan, melt butter over medium-low heat. 
3.  Add celery, green pepper, and onion.  Cook until tender.
4.  Blend in soup, milk, and shredded cheese.  Cook, stirring until cheese is melted.
5.  Combine cheese mixture with noodles, pimiento, turkey, salt, and nutmeg.
6.  Transfer all of the above to a buttered 3-quart casserole. 
7.  Bake for 30 minutes or until hot and bubbly.
