
While making a master grocery list last week, it occurred to me that this family has an over abundance of oatmeal. That's ok though because it all just means that more recipes with oatmeal are going to be made. Lots more.
So much more that y'all will get sick and tired of reading about oatmeal. Then the hate e-mail will come....begging me to stop. Until I will be forced to shut down this blog because of to many oatmeal posts.
Ok....so all of the above probably will not happen. Posting about these muffins however, will ;)
This is a one bowl recipe and soooo flippin easy that even someone who has no experience in baking can make them!
First you start with your wet ingredients (some of the ingredients are not pictured here)....
.....mix it all in a bowl along with your brown sugar (note: there is not this much brown sugar in the recipe. I just wanted to take a picture of my retro-looking brown sugar container for y'all to see).....
Next, take your dry ingredients.....
(Yes, that is Ava's Hello Kitty bowl that I used for the flour. We are big Hello Kitty fans here. Don't laugh. It's true.)
....and mix it in with your wet ingredients.....
Then you are going to take your Dutch Apple Preserves (or any other kind of preserves...apple or not...you can find) and add it to the mix. Stir it all up until everything is well combined.
Drop in spoonfuls (I use my ice cream scooper to measure it out) into a 12 tin muffin/cupcake pan....
......bake at 400 degrees for about 15-20 minutes....
Other combinations besides cinnamon and apple you can do would be lemon extract and blueberries...or orange extract/zest and almonds. Switch it up and be creative :)

Dutch Apple and Cinnamon Oatmeal Muffins
(makes 12 muffins)
Ingredients:
2 eggs
2/3 cup brown sugar
1/2 cup vegetable oil
1/2 cup milk
1 cup all-purpose flour
3/4 cup instant oatmeal (can use flavored if you want, but we used the plain kind)
1 tsp. baking powder
1/2 tsp. baking soda
A pinch of salt
1/4 cup of fruit preserves (apple, blueberry, etc..)
1/2 tsp. ground cinnamon (if using apple) or 1/2 tsp. of any kind of other extract
Directions:
1. Preheat oven to 400 degrees. Line a 12 cup muffin/cupcake tin.
2. Whisk together eggs, brown sugar, vegetable oil, and milk in a medium bowl until smooth.
3. Stir in flour, oatmeal, baking powder, baking soda, a pinch of salt, and ground cinnamon. Mix until combined.
4. Add in the 1/4 cup of fruit preserves. Stir until well combined.
5. Measure and fill into prepared muffin cups.
6. Bake for 15-20 minutes or until toothpick inserted in the middle of each muffin comes out clean.
