Chicken Casserole {Cooking from a SAHM}

I hope y'all are enjoying this lovely group of guest posters so far :)
We are still getting settled over here in New Mexico and are having a wonderful time exploring the area and our surroundings.  Enough about that though....

This next guest poster is a true foodie friend of mine.  We met via Facebook a few years back.  She was new to the food blogging world and I remember helping her as much as I could back then.  She's come a long way since then and I'm so very proud of her!

Hello Everyone,
I've been following Cooking with Libby for a very long time. I was thrilled to get a chance to do a guest post for her. I drilled her for questions back when I first started my cooking page :-)  So first things first I will introduce myself to you. My name is Alyssa and I'm 28 years old. I am a stay at home mom to my two daughters Meghan (4) and Karina(2). I live in Massachusetts with my dearest. I own a cooking page and blog called " Cooking From A SAHM" https://www.facebook.com/CookingFromASAHM http://cookingfromasahm.blogspot.com/. I have owned it for a year and I couldn't be happier. The goal of my blog has been to get kids in the kitchen, and that every family can have their kids help.  Along with owning a blog, I also work with an organization called "ProjectNewBedford". We raise money for shelters, and also do clothing/food/ and toy drives. Keeps my life busy but I couldn't be happier. 

The recipe I am sharing with you today is "Chicken Casserole". It is a really easy casserole, and has been my favorite since I was a little kid. My mom learned of this recipe when she was pregnant with me.. For so long I have always requested it for my birthday dinner she'd make me. Now that I have kids of my own, I happily make it for them. They all love it, and the best part??? It's sooo easy, and is everything you usually keep in your own house. The ritz crackers on top make it taste so great. Your kids are bound to like this as well. 

Chicken Casserole


Ingredients:
2 whole chicken breasts shredded
1 Large container of Sour Cream
1 Can of Cream of Chicken Soup
1 Tube of Ritz Crackers
1 Stick of butter

Directions:

Shred chicken and put it on the bottom of a glass baking dish. In a bowl mix sour cream, and cream of chicken soup. Pour over top of chicken. Crush your ritz crackers and pour over top of chicken. Top with melted butter. Bake at 350 for 15-20 minutes or until bubbly!
